This month we have some wonderful low carb high fat ingredients that are coming into season. Even better we have loads of mouth watering recipes for you to make the most of these brilliant ingredients while they are in season and tasting their best.
Lamb is one of the best meats to eat on a low carb healthy fat diet because it has a high protein content but also contains two times the amount of fat than an equivalent piece of beef. April is a great time to try some different cuts of lamb to find your favourites. For your Sunday dinner you can try our Slow Roast Leg of Lamb in our rich tomato sauce with some Celeriac roasties to mop up that sauce. For a mid week treat have a go at Jon’s favourite dish: Chilli Lemon Marinated Lamb Chops.
Rocket is just coming into season this month and it is definitely worth adding to your plate while it is in season. It is often regarded as a superfood due to its high iron content and its high levels of phyto-chemicals that fight carcinogens in your body. For the easiest lunch on our plan, the Antipasti Selection, the rocket dressed in olive oil makes the perfect accompaniment. Its brilliant peppery taste makes a great bed for a tasty LCHF salads like our New Tuna Mayonnaise Salad.
Spring greens are a great vegetable to get your hands on this month. They are a large and blousy cabbage that are often very reasonably priced. They are high in Vitamin C to support your immune system and have anti-inflammatory properties. Roughly chop a couple of leaves and cook in butter to add to your morning Fry Up. We love buttery Spring Greens as a bed for our Super Fast Sausage and Fennel Ragu.
This is the last month that cauliflower is in season so make sure you make the most of it while it is most flavoursome and cheaper. You can also bulk buy cauliflower, whiz it up in a food processor to make cauliflower rice and freeze portions for easy and quick ‘rice’ during the week. If you are in the mood for batch cooking, why not whip up some Spicy Cauliflower Soup and keep a few portions in your freezer. You can also try our Cheesy Cauliflower Mash for some indulgence on those colder spring days.
The start of lettuce season may not be a date on your calendar but it should be! Lettuce is the first ingredient in many exciting and delicious salads that we can enjoy in these warmer months.
