Cheesy Breakfast Muffins

Half breakfast muffin, half party quiche. These are great to serve at your Keto BBQ or to make in bulk and freeze so you can grab 2 in the morning for breakfast on the go!

Serves 1


  • 2 eggs
  • 1 tsp creme fraiche
  • 1 heaped tsp ground almonds
  • 3 slices Prosciutto or Serrano ham
  • 3 sun dried tomatoes in oil
  • 4 fresh basil leaves, torn
  • handful grated cheddar
  • 1 knob of butter, melted
  • salt and pepper


  1. Brush three muffin tray cases with melted butter.
  2. Fold ham slices in half and lay into the bottom of 3 muffin spaces.
  3. Place a pinch of grated cheese on top of the ham.
  4. Snip 1 sun dried tomato into each case.
  5. Sprinkle in a few pieces of torn basil leaf.
  6. Beat eggs, creme fraiche and ground almonds together.
  7. Season with salt and pepper.
  8. Pour into muffin cases.
  9. Top with the rest of the cheese and bake at 180 degrees for 15 minutes or until the tops are golden brown and don’t wobble.
  10. Serve warm with the rest of the melted butter poured over.
