Eggs, Ham and Avocado

Fried eggs and ham take me back to my childhood… but we never used to have avocado!

Serves 1


  • 2 eggs
  • ½ pack thick sliced ham
  • ½ avocado, mashed
  • 1 knob butter


  1. Melt the butter in a small frying pan and gently crack the eggs into it.
  2. Fry on a low heat, covering with a lid. This way they will cook quickly and evenly without going too crispy at the edges.
  3. Plate up the ham, top with the eggs and dollop the mashed avocado on top.

Tips: Hot chilli sauce tastes great on top of this and will really kick start your morning!
