Italian Cabbage and Bacon

Where Ireland meets Italy and the results are delicious!

Serves 1


  1. 6 leaves of Cavollo Nero cabbage, washed and shredded
  2. 1 red onion
  3. 1 chilli pepper, diced or half tsp chilli flakes
  4. 2 cloves garlic, peeled and halved
  5. 2 rashers thick back bacon
  6. knob butter
  7. drizzle olive oil
  8. 1 heaped tbsp Mascarpone cheese
  9. black pepper


  1. Cut bacon into small pieces and fry in butter and oil with the halved garlic cloves.
  2. Grind over plenty of black pepper.
  3. Add onion, chilli and cabbage.
  4. Stir fry until slightly softened.
  5. Add mascarpone, melt and stir.
  6. Top with grated cheddar.

Add a fried or poached egg for a really satisfying brunch that will keep you going ’til tea time.
