Leek, Cheese and Smoked Salmon Frittata

A quick lunch that has everything you need!

Serves 1

Ingredients:

  • 1 tablespoon olive oil
  • 1 small leek, sliced into 1 cm thick rounds
  • 4 button mushrooms, sliced
  • 1/2 red pepper, diced
  • 1/2 teaspoon dried thyme
  • 1/2 pack smoked salmon, cut into strips or tin of salmon
  • 60g cheddar cheese, grated
  • 2 eggs, beaten
  • 150ml double cream
  • 1/2 teaspoon English mustard
  • pinch Cayenne pepper
  • black pepper
