Low-Carb Pizza

Serves 2


  • 4 eggs
  • 200g cheese, grated
  • 2 tablespoons tomato purée
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 ball mozzarella
  • few slices salami or ham of choice
  • salt and pepper


  1. Preheat the oven to 200.
  2. Mix the eggs together with the grated cheese and seasoning
  3. Spoon mixture onto a lined baking tray and place in the oven for 15 minutes.
  4. Remove from the oven and spread with the tomato purée and layer the mozzarella and ham on top and sprinkle with the Italian herbs.
  5. Serve with a leafy salad.

Tips: You can add any topping you want to this, as long as it’s low carb – so that means pineapple is off the menu!
