March marks the end of the winter months and their seasonal vegetables and the start of the season for some amazing ingredients that are perfect for the low carb high fat lifestyle. This month is bursting with wonderful seasonal vegetables that will keep you in ketosis and add great variety to your plate.
Spinach is a great leafy vegetable to incorporate into your daily diet as it is nutritionally dense and packed with fibre and high levels of iron. Cook a handful of spinach with your mushrooms in your morning fry up to get your greens in early. Follow our Full Fry up recipe to make sure you get the best start in the morning. Spinach also makes a great accompaniment for rich sauces, one of our favourite meals is our Pork and Fennel Meatballs on a bed of fresh spinach which melts beautifully into the sauce.
Peppers are just coming into season now so make the most of this versatile vegetable while it is at its most flavoursome. A great way to cook with peppers is to stuff them, why not try our Lamb and Feta Stuffed Peppers this month? While peppers are bountiful and cheap it is a great time to stock up and make some Roasted Red Pepper soup. This rich soup freezes really well so double up the recipe and keep your freezer stocked with this low carb high fat soup.
This wonderful broccoli is still in season so make sure you look out for it when you’re shopping! We have made this new breakfast recipe, Chorizo and Tenderstem Broccoli Egg Muffins, to make the most of this vegetable this season. These are the perfect for a quick breakfast or a packed lunch.
Fennel is not a well-known vegetable and perhaps you have not tried it before, but while it is in season and most flavoursome you should definitely give it a go! The arrival of asparagus season is met by great excitement from Jon who loves this vegetable. Jon prepares his with lashing of olive oil and generous parmesan shavings, making it the perfect high healthy fat vegetable side. Make sure you don’t over cook this vegetable, you want it to have a little bit of a crunch. Why not try this vegetable at breakfast and use the asparagus as soldiers to dip into your egg, delicious!
