Satay chicken

A low carb high fat Asian favourite.

Serves 1


  • 1 tbsp coconut oil

  • 1 long thumb ginger, finely chopped

  • 4 cloves garlic, finely chopped

  • 1 fresh chilli, finely chopped, seeds in or out your choice

  • 1 large chicken breast, cut into strips

  • 1 red onion, sliced

  • 1 red or yellow pepper

  • 1 handful broccoli florets or purple sprouting broccoli

  • 1 large bunch of corriander, stalks finely chopped, leaves chopped a little

  • 2 tbsp soy sauce

  • 2 tbsp peanut butter

  • 1 lime, juice only

  • 1 sweetheart cabbage sliced into noodles


  1. In a small bowl mix together, peanut butter, chilli, some coriander stalks, soy sauce, lime juice with a little water to loosen.

  2. Heat coconut oil in a wok and stir fry chicken.

  3. Add ginger and garlic and toss to cover.

  4. Add peppers, onion and broccoli and stir fry.

  5. Then add the strips of cabbage, adding more oil if needed and stir fry to soften.

  6. Then pour over the sauce and toss to cover all ingredients.

Tip: Make sure you buy natural, 100% peanut butter.
