A delicious dinner that’s great warmed up for lunch the next day too. A warming soup in more ways than one.
- 1 cauliflower
- 1 onion, sliced
- 50g butter
- 1 chilli, chopped
- 1 teaspoon turmeric
- 1 vegetable stock cube
- 100g creme fraiche
- salt and pepper
- Gently brown the onions in the butter with the chilli and turmeric.
- Add the cauliflower and stock cube and cover with boiling water.
- Once cooked whizz it all up and stir in the crème fraiche.
Tips: Fry up some cubes chorizo to serve on top of the soup for a crispy and delicious garnish
