Spicy Cauliflower Soup

A delicious dinner that’s great warmed up for lunch the next day too. A warming soup in more ways than one.

Serves 4

Ingredients:

  • 1 cauliflower
  • 1 onion, sliced
  • 50g butter
  • 1 chilli, chopped
  • 1 teaspoon turmeric
  • 1 vegetable stock cube
  • 100g creme fraiche
  • salt and pepper

Method:

  1. Gently brown the onions in the butter with the chilli and turmeric.
  2. Add the cauliflower and stock cube and cover with boiling water.
  3. Once cooked whizz it all up and stir in the crème fraiche.

Tips: Fry up some cubes chorizo to serve on top of the soup for a crispy and delicious garnish
