This is simplicity itself but such a genius idea for a really quick and satisfying breakfast.
- 2 eggs, boiled
- 1 avocado
- knob of butter
- Salt and pepper
- Boil eggs to your liking.
- Peel and break into a bowl.
- Chop or mash to your desired consistency.
- Add the butter.
- Scoop the flesh of avocado on top and mix.
Tips: Fresh parsley or chives would be good mixed into this. A spoon of mayonnaise or cream creme fraiche would also taste good and boost the good fats in your breakfast. Equally a few rashers of streaky bacon crumbled over the top or a few anchovy fillets snipped into it would add a powerful salty punch!
