Tanya’s Egg and Avocado Mash

This is simplicity itself but such a genius idea for a really quick and satisfying breakfast.

Serves 1

Ingredients:

  • 2 eggs, boiled
  • 1 avocado
  • knob of butter
  • Salt and pepper

Method:

  1. Boil eggs to your liking.
  2. Peel and break into a bowl.
  3. Chop or mash to your desired consistency.
  4. Add the butter.
  5. Scoop the flesh of avocado on top and mix.

Tips: Fresh parsley or chives would be good mixed into this. A spoon of mayonnaise or cream creme fraiche would also taste good and boost the good fats in your breakfast. Equally a few rashers of streaky bacon crumbled over the top or a few anchovy fillets snipped into it would add a powerful salty punch!
