There is so much you can do to spice up this recipe. You can literally add spice, a fresh chilli or chilli seeds added with the garlic gives it a great kick! You can swap the thyme for basil or a tablespoon of pesto stirred in or dolloped on top. Shredded mozzarella makes a great topping too!
